Located in La Sierra Nevada de Santa Marta in Colombia, DelAgua Coffee is the first to adopt La Palma & El Tucan's Neighbors & Crops model, working with small scale producers in the municipality of Cienaga, Magdalena.
Don Jose has been working with coffee for 25 years. He and his wife, Doña Selina, saved for many years until they were able to buy El Mirador. The farm of their dreams. With 9,000 coffee trees planted in their 3 hectare farm, coffee has become the main source of income for the family.
The natural process begins with a pre-fermination stage of 24 hours at the receival station. The cherries are then moved to the drying stage; coffee is placed in African-style raised beds for over 25 days and are racked and rotated every 4 hours. Due to the levels of sugar and moisture, the first few days are crucial to avoid microbial activity prolongation. Finally, parchment coffee will pass through the dry milling and hand sorting stage.
