A new space has arrived in Highgate Hill, and the locals are loving it.
Saint Laura is the brainchild of brothers Paul and Aaron Zanetti. Their passion in life is hospitality, and after 12 years in the industry it was time to branch out on their own.
They’d had a vision for some time, and searched for the perfect spot for a few years. When a friend mentioned a run-down house that was up for sale over in Highgate Hill, all the blocks fell into place for Paul and Aaron.
They spent 11 months shacked up in the old hairdressing salon, renovating and refining their café concept.
The vision had always been to offer fresh, local and high quality food, paired with specialty coffee, in a space where they could create a community of like-minded customers. As they ploughed their way through the renovations, knocked down walls and built an open kitchen and espresso bar, the space slowly started to align with this vision.
Saint Laura, only opened a couple of months ago, and it’s already become a local favourite where the community is beginning to build.
In line with their seasonal and ‘simple is best’ philosophy, the menu offers a beautiful variety of dishes, featuring homemade sauces and jams, lemon curd, muesli and thyme-infused labneh. A favourite at the moment is the Vanella hand crafed burrata, with tomato, basil, balsamic and toasted sourdough and the spiced poached rhubarb and pear crumble with yoghurt.
Aaron, resident barista, takes immense pride in the coffee he serves, and is a seasoned hand at latte art. He serves his customers Veneziano’s Bella blend which he states is a great all rounder. It’s delicate and brilliant as an espresso, however cuts through milk seamlessly and doesn’t wash out. In addition to having a clear vision and passion for the business, Paul and Aaron’s tip for building a successful business is ensuring you have a consistent product. They’ve seen trends in the specialty coffee industry and understand the importance of keeping people engaged with new products. This is the rationale for their single origin program, which gives them a great way to connect and build rapport with customers.
As for the future, well, we see big things happening for this savvy duo. We’ve been given a quiet hint that a retail offering is coming shortly, with all their homemade condiments and products available to take home. The brothers have also noted their intention on becoming even more so involved in the community, running events, workshop and of course playing their part in the well-known Laura St festival.
