This coffee comes to us from the town and municipality of Pital in the central-southern region of Huila where Ferney Macias owns and manages Finca El Progreso with his brothers. Ferney is part of the NextGen program of Coocentral where the next generation of coffee growers are being provided with training and assistance to increase the quality of their coffee as well as guaranteeing sustainability of the whole supply chain. This coffee is a mixed Caturra and Castillo lot that was handpicked before undergoing 18 hours of fermentation as whole cherry before being pulped and fermented for a further 30 hours in the tank. It is then rinsed and dried on enclosed, raised African beds. This coffee is the flavour profile of Huila summed up and turned up to 11.
