Last year Diofanor Ruiz produced one our favourite coffees, a unique natural Castillo. This year he’s taken it even further with this extended fermentation natural. We had the opportunity to visit Diofanor’s farm early this year to select not only this amazing lot, but its cascara coffee cherry tea alongside with it. This is our first release of Cascara Tea, made from the sun dried cherry skins of this Castillo varietal.
Diofanor is one of the best specialty producers in the Quindio region of Central-West Colombia and has a strong belief in biodiversity. This shows on his farm with very little impact on the natural environment and no use of pesticides or chemical fertilisers. Two years ago, Diafanor was only producing washed coffees that are traditional to Colombia. Under Cofinet’s guidance he began producing some outstanding honey lots. Due to drying facilities at Diofanor’s farm being limited, Cofinet began purchasing ripe cherries from Diafanor and processing them naturally at their own processing station (Finca la Pradera). Now, Diofanor has expanded his drying facilities and is conducting his own processing experimentations.
