Ratio Cocoa Roasters vegan accredited 60% drinking chocolate is a mixture of just four natural ingredients – organic roasted cocoa nibs, organic panela sugar, cocoa powder and organic coconut blossom.
Ratio Cocoa Roasters use traditional chocolate making techniques and source the world’s best single origin cacao beans to make this 60% drinking chocolate. Only a very small percentage of chocolate companies worldwide use these traditional methods, adding no preservatives or additives that could mask the true flavour of the cacao beans.
Produced in their HACCP certified facility in Brunswick in Melbourne, it’s a 7-step process across 7-days. The cacao beans are sorted by hand, then roasted in an antique ball roaster before being cracked and winnowed to remove the husk of the bean. The edible part of the cacao bean is now in small pieces called cocoa nibs. These nibs are then placed in stone grinders for a minimum of 24 hours, which results in a smooth liquid chocolate. The chocolate is then granulated and blended with cocoa powder and sugar before it is hand packed into boxes that are made from 100% recycled box board and printed with soy based inks.
Free from additives, preservatives, GMOs, soy, gluten, nuts and dairy. It has a shelf life of 18 months.
