This coffee comes from San Ignacio Province in the far northern highlands of Peru where Percy Pintado owns and manages Finca Rayos del Sol. The farm which is named due to the sunny weather of the region is located at an altitude of 1,800 metres and is only accessible by horseback or hiking. Percy lives with his wife and 3 kids and is well known in the region as one of the leading specialty coffee producers.
This particular lot is a 100% Bourbon varietal and during harvest the coffee cherries are fastidiously picked before being de-pulped and starting fermentation the same day. The coffee is fermented for up to 26 hours before being rinsed and sun dried for 20-30 days.
We selected this lot due to the rich, stewed fruit notes balanced with complex acidity and mouthfeel. A great example of the potential Peru offers as a growing and diverse coffee origin.
