This very special lot is part of the 'Aida Battle Selection'. Aida Battle was the first female producer to win the Cup of Excellence competition. Aida works with other El Savadoran producers to source and assist in the production of exception single farm lots such as this 'Kenya washed process' coffee from Finca El Paraiso.

The producer at Finca El Paraiso is Claudia Mathies. Claudia is a 4th generation coffee producer and her family has owned Finca El Paraiso since the 1800s. Claudia's farm is Café Practices Certified. Café Practices ensure that every three month a doctor comes to the farm and supplies medical assistance and medicine at no cost to the workers. They also host a Christmas party for the workers children and the surrounding communities.

The 'Kenya washed' processing method involves a  48 hour dry fermentation with washing every 12 hours. A little fresh water is added and turned with wooden paddles. The parchment is then washed and goes back into the fermentation tank to soak in fresh water for a further 24 hours and then placed on drying beds.
