Finca Las Mercedes is owned and managed by the Ortiz family who are committed to ecological care, making efforts to preserve natural wildlife. In the last few years, the Ortiz family has prioritised preservation by planting native trees.
After a 12-18 hour fermentation the coffee is sent through washing channels to be leaned. Next, the coffee is moved to a tank to soak for a further 24 hours. The process is then repeated after which the coffee is rested for 18-24 hours. After the second soak, the coffee is moved to drying patios.
