PNG is a relative newcomer to the specialty coffee scene where the remote locations and challenging infrastructure has made the transition to specialty difficult. This lot is a great example of what is possible within the country and further demonstrates why we should be looking more closely. Especially in Australia, given the proximity. This naturally processed coffee is meticulously before being sun dried on raised beds. Tending to the drying process is particularly important for these natural lots due to the high average rainfall in the wet highlands of PNG, lest defects develop during the process.
