How to make a Winter Warmer Marshmallow Mocha

Get your mitts on our hot new Winter Warmer signatures drinks including the Winter Warmer Marshmallow Mocha. These are now being served at our flagship cafes including Richmond, Surry Hills and Doncaster.

But if you can't get to one of our cafes don't worry. Our Expert Baristas have shared their secret recipes so you can recreate at home.

8 Simple Steps - one delicious drink

  1. Make Chocolate Base in advance and store (see recipe below)
  2. Make Marshmallow Garnish (see recipe below) 
  3. Extract a double ristretto of Winter Warmer (or equivalent espresso) into mug
  4. Steam 40 grams of chocolate base and 150 mls of milk together and ensure chocolate is blended through milk.
  5. Pour onto double ristretto
  6. Pipe marshmallow fluff around the top of the mug
  7. Torch the marshmallow fluff.
  8. Add a S'Mores marshmallow garnish and serve.

Chocolate Base Recipe & Method (Makes 2 Servings)

  1. Combine powders and salt in a container
  2. Add hot water and mix into a smooth paste
  3. Store covered for up to 2 days

Marshmallow Garnish Recipe & Method

  • Large white marshmallows
  • Dark chocolate melted
  • Graham crackers (digestives - smashed into bits)
  1. Pierce marshmallow through centre with large skewer
  2. Melt dark chocolate in microwave for 1 minute, stir, then microwave for additional 30 seconds if needed
  3. Once chocolate is fully melted, roll marshmallows in melted chocolate
  4. Immediately roll chocolate-coated marshmallows in crushed biscuit pieces
  5. Can bulk make and store on greaseproof paper in sealed container for freshness

Serving: Thread finished marshmallows onto cocktail sticks for garnish

  • Marshmallow Fluff and Piping Bag for fluffiness
  • Blow Torch to bring out those caramelised flavors
