The Bayter Family’s El Vergel farm is a beacon of innovation in Tolima, Colombia, blending tradition with cutting-edge coffee craftsmanship. Once an avocado farm, it has evolved into a coffee powerhouse led by Martha Montenegro, Elias, and Shady, whose dedication to specialty coffee and experimental processes has revolutionised their approach.

This Bourbon Sidra coffee highlights the farm’s mosto process, where beans undergo a 72-hour anaerobic fermentation with added lixiviates from Java coffee, imparting complexity to the flavour profile. The beans are carefully dried using a two-stage method—mechanically for 2–4 days before 18 days of sun exposure—then stabilised for 30 days in GrainPro bags to lock in their vibrant character.

In the cup, expect an enchanting medley of watermelon, purple grape, and star fruit. A real fruit bomb of flavours.
